At The Perfect Oyster, we are proud primary producers of premium Sydney Rock Oysters, cultivated in the pristine waters of Wallis Lake, approximately 300km north of Sydney. Our farm is family-owned and operated, and we take a hands-on approach at every stage of production.
Wallis Lake is surrounded by national parks with minimal surrounding development, resulting in exceptional water quality—widely regarded as some of the best oyster-growing conditions in New South Wales. This natural advantage allows us to produce oysters with a clean, distinctive flavour profile that reflects their environment.
The Sydney Rock oyster is not large in size, but it is a rare variety with a flavour that is distinctly different from any other oyster in the world.
